i have a fabulous tomato sauce for pasta but it is dependent on bacon so wont do. zucchini...look in Heidi's site...only have tried the zucchini coins ( we had when you were here...marcona almonds in the dish) but i bet all of her recipes are super. packed for Singapore. excited.
in our house we sometimes do zucchini & feta fritters ( you can freeze ) or quinoa with shredded zucchini and cheese and whatever other shredded veg you want. chicken skewers with zucchini and other veg on the (george forman) grill. but zukes are expensive here, so not that often.
